I remember eating kedgeree with my family as a child, tucked up in the kitchen at the back of the house. It was my mums favourite dish, and she’d prepare it with brown rice and lots of hot peppered mackerel, and serve it with wedges of boiled egg and tomato served around the outside. It was simply delicious, but until last week I hadn’t had it for literally years. Still, for some reason the dish popped into my head last week, and I realised I didn’t know how to cook it! I am now on the hunt ofr the perfect Kedgeree Recipe, so that I can recreate it myself!
